My family loves warm hearty meals, and I like one dish recipes whenever possible. I found a yummy choice that works for all of us, the Tuna Tetrazzini. It only takes 15 minutes to whip up and one hour to bake. I made this recipe twice, once with tuna and once with beans. Both were well received and flavorful.
I have family members with all kinds of diets, from raw vegan to vegetarian, to meat eaters so having a variety of meals is necessary. This book has a whole chapter of vegetarian recipes that even hard core meat eater will warm up to. The Roasted Vegetable Mac and Cheese will tempt anyone. It does call for Cheddar cheese, but there are several vegan cheese’s on the market for those who prefer a cleaner diet.
Of course, the most important feature of every cookbook is the desserts, at least in my home. There are twenty-one decadent recipes featured, and you’ll be torn which one to make first. Cookies, squares, and cakes are always popular, and I was impressed with the variety. With the holidays creeping up, my baking list is getting longer, I want to try them all. The Diabetes Comfort Food Diet book is a welcomed addition to my culinary collection. It offers practical advice, prevention solutions, and delicious, healthy recipes; it has it all!
