Bob’s Red Mill Everyday Gluten-Free Cookbook

The phrase ‘Gluten-Free’ is now a comfortable and acceptable term in our kitchen vocabulary. Gluten-free cooking is not a fad or phase that will pass with time or boredom; it’s real, and it’s here to stay. Gluten is a mixture of two proteins, gliadin and glutenin, which are found in wheat and other grains. They are responsible for the elastic and chewy texture of all doughs. They’re also the culprits that our bodies react negatively to and make grains hard to digest. Many people have become sensitive to gluten so hence the need for gluten-free products and recipes. Bob’s Red Mill offers both.

Bob’s Red Mill has been providing us with the very best in gluten-free flours, cereals, baking mixes, and grains for over 30 years. I’ve been using their flours, grains, and baking soda for several years because I like the taste and their high standards. They’ve recently created a new cookbook, Bob’s Red Mill Everyday Gluten-Free Cookbook. It contains 281 delicious whole-grain recipes for breakfast, lunch, dinner, snacks, and desserts. Each chapter offers a gluten-free rendition of classic dishes as well as showcasing some new and fresh recipes.

Often, we’re willing to try healthier options, but we may be stumped on how to incorporate them into a yummy recipe. This awesome cookbook will introduce you to Bob’s products and show you how to turn them into healthy and nutrient-dense meals. As you pour over each recipe, you’ll find easy-to-follow instructions and helpful ingredient and storage tips and suggestions.

The onset of the cookbook gets right into what grains to use and how to cook them using a variety of methods. It also covers what flours are best and even how to make your own. The next step is stocking your pantry with everything you’ll need to create these scrumptious recipes.

Part of the joy of thumbing through a new cookbook is salivating over the crisp, clear and colorful images, and this book is perforated with them. To me, images influence whether I try a recipe or not. That being said, I was drawn to several bright and yummy-looking photos that compelled me to create the recipes.

We are huge muffin fans; they’re the perfect breakfast and snack food, and they’re an ideal portion size. I love fruit of any kind in a muffin, so the Baked Millet, Apple and Raisin Breakfast Cupcakes resonated with me. It brought back a nostalgic moment when my mom used to bake oatmeal, apple and raisin cookies. The gorgeous scent permeates your home and heart. These delicious ‘cupcakes’ are really muffins with an appetizing attitude. They’re full of wholesome easy-to-find ingredients that will nourish, satisfy and delight your family. Another of my family’s favorites is the Baked Banana Berry Oatmeal; it’s a cozy and hearty way to start a cool day.

Quinoa is one of my favorite grains; it requires rinsing or soaking to remove its bitter coating. It’s a light, fluffy grain that has a nice nutty flavor that blends well with other ingredients. I was happy to find the Garden Vegetable Quinoa Chili recipe. It’s packed with a bunch of different veggies and calls for kidney and black beans. Any bean will work with this recipe; I’ve made it a few times and used chickpeas or a medley of beans. It’s full of flavor, color, and you can garnish it with your choice of topping, we like to use hemp seeds and green onions.

Of course, our favorite chapter covers desserts. Cookies of all kinds are warmly welcomed by my family, especially the kiddos. We found several recipes that made our eyes widen and our mouths salivate. The Ancient Grain Chocolate Chip Cookies are the king of cookies. They’re full of hearty ingredients that stay within the boundaries of healthy and fun ingredients that step into the realm of s-u-b-l-i-m-e!
