Cozy Corn Muffin Recipe
Fall is officially here and my yard is full of colorful leaves that are the essence of autumn. Many of my neighbors have been decorating their yards and front steps with pumpkins, gourds, dried corn cobs, and scarecrows to welcome this beautiful season. It puts me in the mood for some warm and tasty corn recipes. I have several delicious autumn recipes that I make during the cooler months, but the one that stands out the most is the Cozy Corn Muffin recipe, it’s one of our favorites.
Cozy Corn Muffin Recipe
Cozy Corn Muffin Recipe
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/3 cup white sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 egg (beaten)
- 1/2 cup canola oil
- 1 cup milk

Preheat oven to 400 degrees F (200 degrees C). Grease muffin pan or line with paper muffin liners.

In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt. Add egg, oil, and milk; stir gently to combine. Spoon batter into prepared muffin cups.

Bake at 400 degrees F (200 degrees C) for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean.
