The beginning of a new year spurs us on to change our bad eating habits and embrace a healthier lifestyle. There are copious diet plans; it’s just a matter of choosing one that rings true for you. It’s natural for people to purge their pantry when starting a new program. They throw out the junk food and replace them with wholesome ingredients. The first part of this book is about setting up your pantry so you’re successful which includes foods, spices, and kitchen tools. There’s also a page that shares how you can substitute animal ingredients for vegan ingredients. For instance, instead of using eggs, you can use ground flaxseed, chia seeds, or even a banana.

Salads – The salad section offers more than just the basic green salad, although the green salads featured in this book are exciting. Other salads include potato salads, bean salads, grain salads, pasta salads, pickled salads, and many more. Some of these salads are hearty enough to make a great meal.

Soups – I’m mad about soups and we eat a lot of them during the cooler seasons. This section starts off with making your own vegetable stock and then goes into making a variety of delicious soups. You’ll make noodle soups, creamy soups, bean soups, tofu, and miso soups, vegetable soups and so much more. The Wintertime Tomato soup will warm you up and satisfy your taste buds.

 

Vegetables, Fruits, Nuts, and Seeds – shares tips and techniques on how to prepare them in every way imaginable from Crisp-Fried Bean Sprouts to Grilled Tomatoes with Basil. This section is so full of fantastic information, that I feel it’s the bones of the book.

Pasta, Noodles, and Dumplings – is loaded with yummy recipes that include tomato sauces, nut sauces, rice cakes, baked pasta, stuffed pasta, Gnocchi, Pierogies, Asian noodles that inspire endless combinations.

Grains – if you love risotto, polenta, and other grains like barley, bulgar and more, then you’ll be smitten with the recipes on this section. They also share how to cook each grain properly and offer simple substitutions for several recipes.

Legumes – this section offers a versatile collection of dishes that include stews, purées, baked and skillet beans, croquettes, cakes, and fritters.

Tofu, Burgers, and Other High- Protein Foods – I get asked a lot where I get my protein being a vegan. I get a lot from eating tofu and veggies burgers. This chapter will share various ways to cook tofu, tempeh, and seitan. You’ll also learn how to make your own scrumptious veggies burgers. How about a Bulgar Beet Burger with Ginger?

Desserts – my favorite section. Filled with recipes to make creative and flavorful cookies, bars, cakes, pies, puddings, ice cream, and more.

Beverages – This chapter encompasses delicious recipes to make juices, shakes, smoothies, and other refreshing drinks. Peach- Orange Smoothie, Watermelon-Mint Agua Fresca, and Horchata are a few of the included recipes.
