Mindful Vegan & Super Roots Cookbooks
Some of the most powerful healers are fruits, roots, spices and vegetables. They have anti-inflammatory, antioxidants, antimicrobial and other healing properties that assist our bodies in staying healthy and maintaining homeostasis. Eating these foods straight up is fine for some, but others need them incorporated into scrumptious and appealing meals. I recently received two new cookbooks that not only focus on healthy foods, but the recipes are easy to make, taste great, and nourish our bodies.
Super Roots

There is no question that there are certain foods that affect our moods. These vary from person to person, but the major culprits are sugar, caffeine and junk food. Super Roots, on the other hand, is going to help and show us how to include healing spices that will elevate our mood, maintain wellbeing and even enhance our beauty.
Super Roots is divided into five chapters, Pantry, Tired, Hungover, Bloated and Sick. Specific equipment is required, but you may have most in your home already. These include a blender, julienne peeler, wok, and pestle and mortar. I found a gorgeous marble Pestle and Mortar on Amazon for a great price. They also carry granite versions that are equally as nice.
Most of the ingredients required to make the recipes may already be in our pantry, but if not, they are easy to find. Plus, there are twelve flavorful spices and over 60 exciting ways to use them in the included recipes delicious. They’re game-changers when it comes to your moods. The recipes cover several flavor profiles, Sweet & Starchy, Salty & Umami, Pungent & Spicy, Bitter, and Sour. It’s all about balance.
All the recipes were inspired by Eastern cultures – predominantly Indonesia, Vietnam, Thailand, Korea and China. Each will nourish your body and make you feel happy and content! Some of the included recipes are Sweet Potato Chaat, Kimchi Hummus, Tom Yum Fried Rice, Turmeric Corn Fritters and Bibimbap Wraps. Each recipe indicates if they are vegetarian, vegan and how many servings it makes.
