Most of the recipes in Superfoods Superfast take well under 20 minutes to make, so they’re super easy and doable on a hectic schedule. And, the best part is these recipes will nourish, energize, and make you feel great. Just to point out the 20 minutes means that you have all your ingredients in from of you, and you’re ready to roll. There are a few recipes that require you to soak nuts the night before, but after that, the recipes are a breeze to whip up. A few recipes call for brown rice, and I learned that it can be cooked in 20 minutes; the trick is to keep the water boiling at all times.

Another great feature of this recipe book is that it offers a two-week meal plan from Monday to Friday. On weekends we tend to have more time so we can make meals that require more attention. Many of us will make the same thing over and over if we’re too busy, but this meal plan offers a variety of delicious meals that are tasty, nutritious, and satisfying. Here are a few of my favorites.

Breakfast in a Jar shares three simple recipes that are designed to be made the night before when you have very little or no time to make breakfast. You’ll have to precook some of the ingredients and then toss all the ingredients in a jar and set it in the fridge for your early morning action plans. The Raw Oatmeal and the Apple and Maple Buckwheat Stew are sublime. There are several other recipes that you can whip up in the mornings as well.

We are big fans of hearty soups and with the weather starting to chill a bit, a warm bowl of soup is utterly comforting. The Super Soups chapter features ten delicious soup recipes, including a gazpacho, which are warming to the soul and pleasing to the palate. The Roasted Tomato, Sweet Potato, and Chia soup is shown above. It’s a combo of sweet and savory and you can add any veggies to the broth.

If you like hearty and filling meals, then the Sloppy Joes recipe will hit the spot. It’s made with lentils, onions, garlic, and lots of yummy herbs that will have you coming back for seconds. There’s also a recipe for Mexican Black Bean Burgers that can be incorporated into so many different dishes or served as is.

Included are a number of salad recipes that combine ingredients I would not have thought of myself. Plus, the salad dressings are tasty. My family and I find if the dressings are delicious we can eat twice as much salad. I’m always looking for salad recipes, so these are refreshing new ideas. Of course, we can forget the dessert. The Super Sweet recipes are all superheroes. They’ll make everyone happy.

If you’re looking for some healthy alternatives that you can create quickly in your kitchen, then this book is a must-have. All the recipes are created with well-known ingredients and with normal equipment you have at home. The payback is they’re delicious and nutritious! I’m happy to have Superfoods Superfast in my culinary collection.
