In the past, coconuts and coconut oil have gotten a bad rap. Everyone was up in arms and misinformed about its saturated fat, but as insights apprise and wisdom and knowledge improve, we now know that the divine coconut has impeccable attributes. I’m talking about the real coconut, not the gross and unhealthy sugary processed product.
The coconut is high in dietary fiber, improves heart health, helps prevent obesity, low glycemic index, improves digestion, aids and supports overall immune system functions, and reduces sweet cravings. What an awesome reputation! So it could not be more natural than to incorporate coconut into our meals. I found the perfect recipe book. The Complete Coconut Cookbook offers us 200 gluten-free, grain-free, and nut-free vegan recipes.
You’ll be using various parts of the coconut in each of the recipes to some degree. We all know about coconut butter, sugar, water, and milk, but many may not know about coconut flour, yogurt, nectar, vinegar, and liquid coconut amino acids, and they’re all good for you. That being said, you may not have these ingredients in your pantry. I found all of them at my local grocers and health food store.
We found several recipes in each chapter that we truly enjoy. For breakfast, there are 18 yummy recipes to choose from. We really love the Baked Blueberry Banana Porridge, it’s hearty, cozy, and loaded with fiber.
For lunch or dinner, how about some Chipotle Black Bean Tacos? This recipe calls for Coconut Flax Tortillas which you can make yourself with the easy to follow the recipe they’ve provided. You’ll savor these piquant flavors, they’re tangy, tasty, and oh so tempting.
There’s nothing more stirring and euphoric than coming home to freshly made cookies and cakes. The smell permeates your home, heart, and spirit. This book is loaded with easy to make, decadent desserts. Everyone and I mean everyone loves Chocolate Chip Cookies, but until you’ve had them made with coconut ingredients, you really haven’t experienced life to the fullest. The Buckeyes are another ambrosial treat that has been modified to include only non-allergen ingredients. They’re so popular that we’re going to include them in our Christmas festivities. If I dare tempt you even further, you will love the Pumpkin Pie and Rhubarb Crumble.
So if you’re looking for healthy, heavenly, and hassle-free baking, then I would definitely recommend this worthy cookbook. The enticing textures and tastes represent the true essence of all that is coconut. It’s a must for your cookbook collection and it would make an awesome gift too.
